UPDATE:
LANSING - A new truck has joined the Lansing food truck lineup. It may not be your typical food truck, but it's bringing some fresh ideas to the food truck game.
The Purple Carrot Food Truck is not the usual food truck. While many think of junk food when they hear the term food trucks, The Purple Carrot does not fit this stereotype. By combining local and fresh ingredients, The Purple Carrot is able to produce high end meals that won't leave you feeling guilty.
"We've been to almost all the farms and we've gotten produce and chickens and cheese from to really see their operations and know that you're serving a good product and being able to stand behind your product is great." - Nina Sarducci, Co-Owner, The Purple Carrot Food Truck
The Purple Carrot travels from various locations such as Old Town in Lansing, to the Meridian Farmer's Market on Saturdays, and the Hannah Office Center for lunch. The menu varies based on what ingredients they are able to obtain during the week. They truly believe what tastes best is what's fresh and local.
"I mean, I think the original goal for almost any restaurant is to serve really good food. If you don't have good food, no ones' going to come back and you know, the longer I've been in the food industry the more food I've been around, the best food is what's from your local area." - Sarducci
After working in various restaurants in the food business, Sarducci and her partner Tony decided it was time to create something of their own. While opening a restaurant can be an extremely risky venture, they settled on starting from a truck to test the waters. So far their skills have not let them down.
"We just thought, you know as far as a good starting point It was just a fun way to kind of get our name out and our point of view out as far as food goes to the Lansing community." - Sarducci
