• Positioned at the back of the farmers' market, Stacks Barbecue still brought in a crowd from the public.

MERIDIAN TOWNSHIP - The Meridian Township Farmers' Market on Wednesdays is full of many vendors offering local produce, artisanal goods and more. Along with these stalls sits the Stacks Barbecue food truck.

The truck is owned and operated by Jay Daniels, his business partner Robert Van Patten and his son Devin Daniels. The food truck has been operating for around a year, but Jay Daniels said he's been cooking for a lot longer.

"For the last, probably 15 years or so, I've just kind of been trying to perfect the barbecue game and working on smoking meats," Daniels said. "That's my thing."

Stacks Barbecue offers brisket, pulled pork, grilled chicken, nachos, smoked ribs and more. The owners of Stacks Barbecue are all from Lansing and Daniels said that even though they aren't local to Meridian Township, buying food from trucks like his, helps support local businesses.

Ray and Kate Jackson are frequent customers of Stacks Barbecue. The father and daughter help run a vending booth at the market called The Ugli Pie Company, which offers pies, pastries and bake at home kits.

For their dinner, the Jacksons said they enjoy eating at Stacks Barbecue and exploring the rest of the market.

"To be honest, Meridian Township doesn't have the best food scene," Ray Jackson said. "Letting people with food trucks can really alter that. You can create a wave of culinary delights that aren't normally available."

Stacks Barbecue will be at the Wednesday Farmers' Markets until the end of the season.
